Emilia Romagna is the Italian region with the highest concentration of DOC and PGI products in Italy, there are 43 of them, all very different. From the sea to the mountains from the plains to the cities; a sector that in Italy is worth 132 billion in turnover and has a great driving force in exports. From Parmigiano Reggiano to Parma Ham, from balsamic vinegar to Romagna Piadina, from Modena Cotechino to Bologna Mortadella, up to stuffed pasta, wines and Cervia Salt. All big names and big brands in the agri-food sector, a tradition of 'know-how' which from farm to table is synonymous with quality and excellence.

Start your visit of an authentic producer of Parmigiano-Reggiano PDO: you’ll discover how the King of all cheeses with the tasting at the end. Transfer to the province of Modena.

Guided visit at an extra-ordinary family-run production of Traditional Balsamic Vinegar PDO housed in an ancient country-chic villa in full Italian style

Ultra-rich typical lunch at the family table including all the local foods that better suit the pairing with the two original King vinegars: rustic omelettes, different ageings of Parmigiano, 2 types of fresh ricotta cheeses, an endless plate of cured meats, a super tasty risotto, Lambrusco wine and – cherry on top – homemade cakes bearing the grandma’s touch and the two Giugiaro bottles of Aceto Tradizionale left on the table at your complete disposal!

WINE EXPERIENCE

Wine lovers out there!

Meet the guide directly at the first producer’s, a young and industrious family-run wine estate at about 45 min from Bologna, and learn about their peculiar product range, including Chardonnay, Pignoletto and Albana, the first Italian white wine to win the official DOCG recognition in 1987 (Top denomination of Origin).

Head-on to the second wine estate where you will taste 3 individual and distinctive interpretations of Sangiovese di Romagna, revealed through a guided tour of the winery, will be paired to top quality, locally-produced gourmet foods such as mortadella, salame, caciotta (soft cheese) and/or pecorino, thus making an unforgettable tasting lunch!

Discover the secrets behind that delectable Italian dessert GELATO!

Learn the basics of making gelato and what makes it different from other ice creams then indulge in a delicious tasting.
Whether you're a culinary master or just an enthusiastic foodie, this class is the perfect combination of mouth-watering gelato and entertaining, hands-on instruction. Enjoy an insightful presentation and a taste of some of the ingredients that go into traditional and more novel flavours of gelato. Learn how to produce cream-based or fruit-based gelatos that can be sugar-free and even dairy-free thanks to the use of soy or rice milk.

Follow your instructor step-by-step and learn about the development and application of natural colours, as well as the heating and freezing techniques that go into creating this much-loved dessert. You will be welcomed by our expert environmental guide directly at the most convenient point in Borgotaro, a mountain town in the province of Parma locally known for its peculiar gastronomic treasures, and together you will reach the path starting point in the woods: ready to learn about this amazing mountain landscape and search for the treasures hidden in its forest? Not just porcini mushrooms (which have a denomination of typical origin there), but also wild berries, peculiar trees, and rare bushes, according to season.
